When I find something I like, I stick to it. Especially when it comes to dishes I love at particular restaurants. I remember when I was a kid, the waiter at one sushi restaurant in particular along Queen West in Toronto nicknamed me ‘Sushi Pizza‘ because of how often I ordered it. I’m not even joking, he would literally yell “SUSHI PIZZA!!” every time I walked into the restaurant with my family and I would go completely red in the face (but obviously still ordered that crispy and delicious salmon-topped rice pizza every time), and you know what? I still enjoy ordering a good Sushi Pizza to this day.
As an adult, not much has changed. I still get totally obsessive about particular things at certain restaurants, and I’ll go over and over again to enjoy them. Over the past few years, the dish that has taken over my life – and that I eat and talk about regularly – is most definitely my favourite Gusto Kale Salad from Gusto 101 on Portland Street. I’m pretty open about my love for this restaurant (I even mention it in my Easy Homemade Hummus Recipe video) and you can be sure to find me enjoying their delicious Cavolo Nero Salad AKA THE Gusto Kale Salad (with chicken) alongside a glass of their dollar-an-ounce house wine every time I’m there.
When I found the official recipe shared by Chef Daniel Mezzolo on the CBC website, I decided to try making it at home for the first time to see how it compared to what you get in the restaurant. The result? An easy and quick kale salad recipe that is sure to become a homemade staple for everything from healthy packed lunches to family dinners and summer BBQs. Because I love this salad soooo much, I wanted to share it with all of you of course! Find the recipe for my favourite Gusto Kale Salad below:
The Gusto Kale Salad aka Cavolo Nero Salad Recipe
What You Need:
1 1/2 cups lacinato kale, tough ribs removed and finely julienned
1 tbsp pecorino, grated or finely shaved
1 tsp toasted pine nuts
2 tsp dried Zante currants
6 tbsp Lemon Vinaigrette
1 tbsp Parmesan, grated or finely shaved
4 tbsp olive oil
6 tbsp lemon juice
1/4 cup rice wine vinegar
1/4 tsp kosher salt
What To Do:
1. Make Vinaigrette: Whisk all ingredients in a bowl until combined.
2. For Salad: Mix all ingredients together in a bowl and let stand for a few minutes to let everythign marinate and soften. Plate and garnish with additional grated parmesan and pecorino.
Makes 1 seriving.
What did I tell ya? Easy right!? Try this at home for an easy weeknight meal or make it on the weekend and enjoy it for a healthy lunch the next day. Of course, I would also recommend a visit to Gusto 101 to experience the restaurant, and this delicious salad made by Chef himself!
