A Delicious Pineapple Basil Margarita Recipe from Mexico with Casamigos!

If you caught yesterday’s post about How To Host a Dinner Party 101 with Cascade Platinum, you may have noticed mention of my recent taco party’s signature drink – the Pineapple Basil Margarita with Casamigos Tequila. As expressed throughout the story, my approach to hosting a dinner party is most often extremely laid back, and I like to serve things ‘family style’ when hosting a big crowd. But just because I might forgo formal table settings and personal place cards at #CasaGC parties, doesn’t mean I don’t take the time to think about different ways to make the experience special, and memorable for my guests.

In the case of our summer taco party (which was inspired by a recent trip to Mexico to shoot the upcoming episodes of Style Jaunt) I decided to recreate a mind-blowingly delicious margarita I’d had while visiting a small little hippy surf town called Sayulita. Up until my afternoon lunch at a tiny little side street cafe in Sayulita, I had never experienced pineapple and basil together; and let me tell you, the combination knocked my socks off.

I couldn’t wait to get home and share the eye-opening, taste-bud exploding experience with my fellow foodie friends and thought this party would be the perfect opportunity to introduce it to them. Since I never got a recipe from the cafe, I decided to make up my own version, which, thankfully, turned out just as well – if not better (if I do say so myself). What You Need:

(approximately)

– A large pile of pineapple chunks

– A big bunch of fresh basil leaves

– A bottle of tequila, preferably Casamigos

– A bottle of Triple Sec

– Club Soda

– Fresh Limes

– Salt

What To Do:

As is the case with most of the recipes I share, I don’t have exact measurements to provide you with as everything is meant to be quanto basta or “as much as you need” as the Italians say. To start, place some of the pineapple and basil together in a blender or food processor and blend until smooth. Here you can play with the amount of each to reach a taste that you like, but I really don’t think you can go wrong – it all tastes so fresh and amazing! Once blended (it should look like a very green juice) pour it into a large pitcher with ice for serving. Then add your typical ingredients for a classic margarita such as Casamigo Tequila, Triple Sec, a pinch of salt, and a bit of fresh lime. Play around with the alcohol measurements to reach a taste (and strength) that you like. Personally, I like my drinks strong, but obviously you should not be using a full bottle of tequila or Triple Sec for one pitcher – spread it out, people! Top up the entire mixture with a bit of club soda until the pitcher is filled to the top, then serve in individual glasses.
