Double Berry Chocolate Homemade Granola Bar Recipe

Granola bars are a grab-and-go snack that we all know and love, but what you might not realize is that they’re actually super easy to make from scratch at home! Here we’re sharing a delicious Double Berry Chocolate homemade granola bar recipe courtesy of our friends at KitchenAid Canada.

This is a great recipe to whip up with help from your KitchenAid Mini Stand Mixer, however, if you don’t have one, a good ol’ fashioned bowl and spoon will do the trick just as well.

Double Berry Chocolate Homemade Granola Bar Recipe

Double Berry Chocolate Granola Bar Recipe

What You Need: 

4 cups (1 L) quick-cooking oats

1-1/2 cups (375 mL) honey

1/2 cup (125 mL) packed dark brown sugar

¼ cup (50 mL) unsalted butter

1 tablespoon (15 mL) vanilla

1/2 teaspoon (2 mL) kosher salt

1-1/2 cups (375 mL) mini chocolate chips, divided

1 cup (250 mL) whole almonds, roughly chopped

1 cup (125 mL) dried cranberries

1 cup (125 mL) dried blueberries

What To Do:

Preheat oven to 350°F. Spread oats onto rimmed baking sheet. Bake 10-12 minutes or until golden brown.  Set aside.  Reduce oven temperature to 325°F.

Combine honey, brown sugar, butter, vanilla and salt in small saucepan.  Bring to boil, stirring occasionally. Cool completely.

Add toasted oats, 1 cup chocolate chips, almonds and dried berries to Bowl of KitchenAid® Artisan Mini Stand Mixer. Attach Bowl and Flat Beater to mixer.  While mixing on Speed 3, slowly pour in honey mixture and mix until combined.  Spread into greased 9×9-inch baking pan, pressing in an even layer.

Bake 25 minutes or until edges are slightly browned.  Cool completely in pan on wire rack before cutting into bars. Melt remaining chocolate chips in microwave; drizzle over bars.  Let stand until chocolate is firm.
