It certainly ain’t everyday that you come across a 24-year-old who can say they’ve published a cookbook, but that’s the case for YouTube star turned entrepreneur, Olivia Biermann. Known online as Liv B., this young culinary star has amassed her following by sharing her budget-friendly vegan recipes for those fellow millennials who are ‘struggling to afford their “Avocado Toast” lifestyle.’

Student or not, many of us can relate to wanting to find healthy recipes that are easy to make at home, and don’t break the bank. In just two years, Olivia’s mouth-watering plant-based recipes have helped her gain over 650K subscribers and more than 34 million video views on YouTube (her famous Snickerdoodle Mug Cake has over 2 million views alone).

Now, she’s hit bookshelves with the release of Liv B’s Vegan on a Budget cookbook that features 112 of her unique vegan recipes. Today we’re sharing one of the yummy recipes from her new cookbook that’s perfect for a healthy weekend meal, or to prep for your week ahead.

Sweet Chili Tofu and Rice Bowls Recipe

What You Need: 

1 3/4 cups of white or brown rice

1 recipe of Best-Ever Tofu Cubes

1/2 cup of Sweet Chili Sauce

1/2 large cucumber, sliced into strips

1 ripe avocado, sliced

sesame seeds (optional)

1 lime, cut into wedges
